Pound Cake!

PCC gave us a lot of pound cake on Mother’s Day.  (Four of them, to be exact.)  We knew we had to dress it up a little, but oh, what to wear?

Enter chocolate … and coconut.  Choco-coco pound cake supreme!  We were able to fashion a very spreadable frosting from just 3 vegan ingredients.


  • 6 cups vegan chocolate chips
  • 1 can coconut milk
  • 3 cups coconut flakes

  1. Place the chocolate chips and coconut milk (in alternating gradual additions) in a double-boiler pan on low heat.  Stir until thoroughly melted and glossy.
  2. Stir in 1 cup coconut flakes.
  3. Remove from heat and let cool until slightly warm and spreadable.
  4. Carefully frost donated cake; sprinkle additional coconut flakes to cover.

*Frosts two cakes.

What to do with more limes than you need for salsa, but not enough for limeade?

The answer is simple:  make ceviche!

…Vegan ceviche, that is.

In lieu of seafood, we added a little fruit – apples in particular.  There was plenty of protein in the rest of the meal, so we could get away with knocking off a food group.  With the apples and celery, it reminded us a bit of Waldorf salad.

Here’s how we rolled (and squeezed) on Mother’s Day:


  • Three cucumbers, washed and sliced into very thin rings
  • Three stalks celery, washed and very thinly sliced
  • One small white onion, washed and diced
  • One salad tomato, washed, seeded, and diced
  • One-third of a carrot, peeled and grated
  • One pink lady apple, washed and diced
  • One orange, peeled, separated, and sliced
  • Eight to ten limes, rolled and juiced
  • Splash of red wine vinegar
1.  Combine in a bowl and marinate for an hour.
2.  Actually… that’s it!

Not bad for donated produce!!
